Because sweet hot tea is usually nasty. Hot tea is best brewed until red and without any additives.

But you can't have hot tea without sugar in it! That's just.............. bad!

I might not drink the foul stuff, but I know that you put sugar in tea or else it's bitter.

If you're talking about what I said, I'm not talking about hot tea. I'm saying, when you make iced tea, the tea is first hot, and whether you add sugar to that before cooling it determines whether it is sweet tea or iced tea.

No, the tea only become bitter if you brew it too long. If you watch it and stop it when it becomes a deep red, it isn't bitter at all.

He's right. You have to steep it to a dark red color. If you get it to a shade of brown, that's when it is probably bitter.
