Why is the resolution on RM2k at 640 x 480 and how can I change that?

Because that's just the way Enterbrain is.

It's not possible to set the resolution because of the way everything is designed (a set number of tiles onscreen, each with a set size)

Well technically you can't resize it, but if you know how to hack with programs that use things like hexadecimal, you could though I don't know how well it would run to be honest.
