Skyrim. You wanted to kill them

Make all npc killable
Make children killable

I just went and killed those fucking imperial camps that I was told to kill but couldn't. Felt good.

Mods sometimes make me wish I had purchased Skyrim for the PC instead of Xbox, although there certainly is something to be said for the ability to sit in an Xbox Live party chat with a couple of my friends while I play

Pirate the PC version. Even if you have some moral desire not to be a pirate, you can justify it considering you actually bought a legit copy.

Of course, I'm not suggesting you should do anything illegal.

I purchased the legitimate version of the game off steam because there was a sale and it was worth $30 in my mind (To me, almost no game is worth $60). I got to go over to Wallow's house over the weekend and laugh as I killed off those stupid camps that you're told to kill off but can't because every single one of them has an officer who can't die.

If the camps you're referring to are the Stormcloak/Imperial camps, then the reason you can't kill off that officer is because they are essential if you join the other side of the conflict.

But you can't join the other side because you already won on that side. I think it's just a stupid thing Bethesda could have easily fixed. Especially since you are ordered to destroy all imperial/stormcloak camps.

Maybe, but imagine how angry you would be if the essential character on your side somehow got killed and the questline became broken and you couldn't complete it. If there's a way in the game for a character to die, my luck dictates that they will, even if they're not supposed to at that time.

But in that case, just make story-relevant characters respawn. It's as simple as that. Sure, it might be somewhat unrealistic, but IDGAF. It's just as unrealistic for someone to be immortal.

I see an alternate universe where such characters can die and just respawn... I also see complaints in that universe along the lines of "Why do they come back to life? That's so unrealistic! They should just be incapacitated and eventually recover from their injuries"

It's an awkward situation either way, and thankfully isn't something that the player comes across all that often.

You're joking right? I completed the story line, sometimes I just wanna go kill a town, but I can't. because NOT EVERYONE WILL DIE! also, the example I gave. That's a great one.
