I think it is more that people would just rather assume they really mean what they say rather than consider the fact that they are joking. People like being upset.

I mean, if The Amazing Atheist ended every video with a short clip explaining that he's mostly trolling, yeah, that would probably hurt his success. But unless you are seeking that information, it isn't readily available, and most people will just jump to the conclusion that he believes everything he says.
