Yeah, so I have a collection of an anime in mkv format and I want the audio in mp3 format to play in my car. I've done this with DVDs, before but not with mkvs. Any suggestion?

Yeah, get "Gold Wave," it is the best batch video to audio. It costs a little, but will save the hassle of looking for other programs.
When searching for files to convert, make sure to change it to "All Files," not just the supported ones.
I have personally tested this out with 3 .mkv files.
EDIT: By the way, the button is in the file tab with the name "Batch Processing."
