I'm making a Human Paladin. What sort of skills am I going to shoot for?
Is there a cookie-cutter build, or are there a couple of choices?
Also, I want to go enchanting, but also blacksmithing... How viable is blacksmithing without mining? Should I abandon my enchanting idea altogether? I've heard it's really expensive and not really worth it all that much... Is that true?

Don't.
Without mining it's pretty much retarded. Because all the low level materials have risen in price drastically due to twinking. Enchanting is really useful and a money maker late game. And I think you should just drop mining when you hit 60 and pick up enchanting then instead.
As for a build for Paladin, not a freaking clue, never played alliance before.

Bleh @ Paladin. There's nothing more boring in existence.
At any rate, cookie cutter is a Retribution spec, although I can't tell you the exact Talent build.
Blacksmithing is POSSIBLE without mining, but between disenchanting items for Enchanting Supplies -AND- buying materials for Blacksmithing, you will be 100% broke for years.
In my opinion, it's going to be one or the other.

Okay, I hear rogue instead of paladin.
Other opinions? It's a player run server, so plan for less people than most servers.

I guess I could try out a hunter... Dwarven with guns, or NE with bows though?
Or maybe a rogue instead... ?_?

Hunter is easy solo.
I'd say get two gathering skills to make money, but if you're on a player-ran server, there wont be much of a market for people to buy the shit you gather, so that's kinda pointless.

You can learn whichever weapon class you're missing for 10s, so I wouldn't put too much consideration into the starting weapon class when choosing race.

Oh, I was just wondering which was better, really.
Okay, so I'm either going Paladin, my initial inclination, or Rogue or Hunter... Who can solo the best?
Or is there another class that's particularly good at soloing?

I've played Shaman, Hunter, Rogue, Priest. I'd say Shaman, hunter, and rogue are all pretty good soloers.
In your case, you don't have shaman as a choice, so you're choosing between hunter and rogue.
Hunter, you get a pet that tanks for you, so you rarely if ever die, so it's pretty easy to solo. Hard to take on large groups of monsters alone though.

Hunters are probably the easiest solo class, along with warlocks.
Rogues have the highest (mages may tie here) single target DPS in the game.
Both are vastly overplayed on most servers, though.

Why even prepare a build for a player-run server? They don't even have skills/professoins working
